4 cups watermelon, cubed
1 large English cucumber, sliced
1 large, ripe Mission Avocado, cubed
½ red onion, thinly sliced
½ cup fresh mint, chopped
½ cup feta cheese, cubed (can sub dairy-free feta)
2 tbsp lime juice
2 tbsp extra virgin olive oil
1 tsp honey
½ tsp black pepper
1 tsp salt

Add cut watermelon, cucumber, avocado, red onion and mint to a large bowl.

For the dressing, whisk together lime juice, olive oil, honey, salt and pepper, and drizzle over the salad. Toss gently to coat.

Top with feta, and serve. Enjoy!
