To a large skillet, add olive oil, onion and peppers over medium heat. Cook for 2-3 minutes until beginning to soften.
Add sweet potatoes, cumin, paprika, garlic powder, salt & pepper. Stir, and cover for about 5-7 minutes unti sweet potatoes are fork tender.
Meanwhile, slice sausage links, and place in a separate skillet over medium heat. Cook for 1-2 minutes on each side to brown.
Add browned sausage and kale to the hash, and stir to wilt kale. Season with another pinch of salt and pepper.
Serve with fresh cilantro, sliced jalapeños, salsa and avocado. Enjoy!
