Ingredients
3 cups cooked & cooled quinoa (from 1 cup of uncooked)
2 cups strawberries, quartered
1 large English cucumber, diced
½ cup sliced almonds
¼ cup fresh mint, minced
Lemon Vinaigrette
juice of 2 lemons
⅓ cup extra virgin olive oil
2 tsp honey
salt & black pepper to taste

To a large bowl, add quinoa, strawberries, cucumber, feta and mint. Mix to combine.

Whisk together Lemon Vinaigrette ingredients in a separate bowl. Drizzle over quinoa salad, and mix well.

Allow to sit in the fridge and absorb dressing before serving. Enjoy!
