Preheat oven to 300 degrees. Line a metal baking sheet with parchment paper, and set aside.
Add all of the dry ingredients to a large bowl.
Pour in water and mix to combine well.
Allow to sit for at least 20 minutes, until chia seeds have formed a gel.
When the water is completely absorbed and the mixture has become a thick paste, place on your parchment-lined baking sheet.
*Note* If it still seems a little dry, add a couple more tbsp of water.
Use a spatula to press into a large rectangle. Spread the dough as thinly as possible without breaking, about 1/4 inch.
Bake for 30 minutes, rotate your tray, and bake for another 20 minutes or so, until firm and crispy.
Allow to cool completely before breaking into crackers.
