Ingredients
1 cup raw cashews
⅓ cup coconut flour
½ cup freeze dried peaches, roughly chopped (plus more for rolling, optional)
⅓ cup unsweetened dried peaches, chopped into small pieces
5 Medjool dates, pitted
3 tbsp coconut oil, melted
3 tbsp coconut butter
1 tsp vanilla extract
½ tsp salt
a couple tbsp of water to moisten (if needed)
Directions

Add all ingredients besides the dried peaches to a high speed blender or food processor.

Pulse until well-combined and crumbly. Add water if more moisture is needed.

Stir in dried peach pieces by hand.

Scoop into 12-13 balls and roll in more freeze-dried peaches (optional - I pulsed them in my blender to make a powder).

Store in the fridge or freezer.
