Add the cashew butter, almond flour, protein powder, maple syrup, vanilla extract and salt to a bowl. Mix to combine well.
Add in chocolate chunks, and mix.
Place dough in a parchment-lined loaf tin, and use your fingers to press into one, even layer.
In a small bowl, melt together chocolate and coconut oil in the microwave in 30-second increments. Stir to combine.
Pour melted chocolate over cookie dough, and smooth with a spatula into an even layer.
Optional - top with a sprinkle of flaky sea salt.
Place tin in the freezer for at least an hour to set up.
Cut into 8 squares, and store in the fridge or freezer. Let sit for a minute or two at room temp before eating.
