Cook noodles according to package directions. Reserve at least 1/4 cup of pasta water when finished.
Meanwhile, add olive oil, cherry tomatoes, salt and pepper to a large sauté pan over medium-high heat.
Allow the tomatoes to blister slightly, then turn down the heat to medium.
Add spinach, olives, lemon juice and garlic. Cook for 2-3 minutes, until spinach is wilted.
Add hummus and pasta water, stirring to create a sauce.
Add in cooked noodles, and toss to coat completely.
Serve with lemon zest and fresh herbs. Enjoy!
