2 cups almond flour (finely ground, not almond meal)
¼ cup maple syrup
1 scoop or individual packet of collagen peptides (I used Vital Proteins)
1 tsp vanilla extract
2 tbsp lemon juice (about one lemon)
zest of one, medium-sized lemon
1 tbsp Bulletproof Brain Octane Oil
¼ cup desicated coconut, plus enough extra to roll the finished bites in

Combine all ingredients into a food processor and blend until the consistency is smooth.

Refrigerate the dough for about 30 minutes to make it more workable.

Form the dough into balls and roll in additional shredded coconut.

Store in an air-tight container in the refrigerator for up to a week. Or keep them in your freezer for a denser bite!
