To a large pot or dutch oven, add the oil over medium heat. Add bell pepper and onion, and cook for 3-4 minutes. Add in garlic, and cook for another minute.
Add in ground turkey or beef, and break into small pieces with your spatula. Cook until no pink remains (if using beef, I recommend draining the fat after this step).
Pour in corn, tomatoes, beans and hatch chilis, and mix to combine completely. Allow to simmer on low heat for 5 minutes.
Add in cooked pasta, and stir to incorporate.
Serve with toppings of choice. Enjoy!
