Preheat oven to 350 degrees.
Line an 8x8 baking pan with parchment paper, and set aside.
To a bowl, add all of the crust ingredients, and mix to combine completely.
Pour crust into the lined baking dish, and use your fingers to press into an even layer.
Bake crust for ~15 minutes, until slightly golden. When finished, set aside to cool.
While cooling, make the pecan filling. Add maple syrup, coconut oil and vanilla to a medium-sized sauce pan over medium heat. Bring to a simmer and cook for 3-4 minutes, stirring consistently.
Add pecans, and cook for another 30 seconds or so.
Pour the pecan mixture over the crust, and smooth into an even layer.
Place back in the oven, and bake for 20 minutes.
Allow to cool completely before cutting into 9 bars (the mixture will harden as it cools).
You can even place the baking dish in the fridge (once cooled at room temp) prior to cutting to make slicing easier.
Sprinkle bars with flaky sea salt, and serve with ice cream or whipped cream. Enjoy!
