2 cups gluten free rolled oats
½ cup raw almonds, roughly chopped
½ cup raw pecans, roughly chopped
¼ cup coconut oil, melted
¾ cup dried figs, roughly chopped
¼ cup maple syrup
½ tsp pink Himalayan salt
½ tsp ground cardamom
½ tsp ground ginger

Preheat oven to 325 degrees.

Completely combine all ingredients in a large mixing bowl.

Spread granola evenly on a metal baking sheet.

Bake for 20-25 minutes until golden brown, stirring halfway through.

Remove from oven and allow granola to completely cool on countertop.

Store in an airtight container for up to 2 weeks.
