Add nuts to a bowl with enough water to cover. Allow to sit overnight or for at least 8 hours. Strain water when finished.
In two batches, add a cup of soaked nuts, 5 cups of filtered water, vanilla extract and cinnamon to a high speed blender. Blend for a couple of minutes until mixture is completely combined.
Pour through a nut milk bag, fine cheese cloth or thin dish towel in a large bowl to strain. Kneed and squeeze to remove all of the liquid from the nut milk pulp.
*Note* Do not discard the pulp. I'll be sharing tasty recipes to put it to use soon!
Store nut milk in a jar or air-tight container in the fridge.
