To a food processor or blender, add the walnuts, coconut flour, salt, cinnamon and pumpkin pie spice. Pulse until mixture is well-combined.
Add grated carrots, dates, maple syrup, coconut oil and vanilla extract. Mix until a dough forms. Taste, and add more maple syrup if you like a bit more sweetness.
Add raisins, and mix in by hand.
Scoop out dough to form balls, and roll in desiccated coconut until fully covered.
Store in an air-tight container in the fridge or freezer.
