Add oats, chia seeds, ground flax and salt to a blender or food processor. Mix until well-combined.
Add cashew butter, melted coconut oil and dried cherries and mix until a dough forms.
Put the dough in the freezer for about 5 minutes to firm slightly.
While dough is chilling, melt chocolate in a small sauce pan.
Remove dough from freezer. Scoop out to form cookie shapes and place on a parchment-lined cookie sheet.
Drizzle melted chocolate over cookies and place in the fridge to set.
Store in freezer or fridge.
