Ingredients
2 cans chickpeas, drained and rinsed
2 cups diced apples (about 2 small apples)
1 bag shaved Brussels sprouts
½ small red onion, finely chopped
1 cup diced pear
⅓ cup feta, crumbled
⅓ cup dried cranberries (unsweetened if possible)
¼ cup fresh parsley, chopped (plus more to garnish)
Apple Cider Vinaigrette
¼ cup extra virgin olive oil
2 tbsp apple cider vinegar
2 tsp stone ground dijon mustard
juice of one lemon
½ tsp garlic powder
salt and pepper to taste

Add all of the salad ingredients to a large bowl.

Make the vinaigrette by whisking together dressing ingredients in a small bowl. Adjust seasonings to taste.

Pour vinaigrette over salad, and toss to coat.
