
This time of year, I can’t help but spend much of my time day dreaming of warmer weather. Though tan lines might not be in my near future, I can at least bring a little tropical goodness into the kitchen to get me through the next few cold months.
It also doesn’t hurt that beach-y flavors such as coconut and citrus have always been my go-tos! So I created these Lemon Coconut Collagen Bites when I need a little something to tame my sweet tooth or a pre-gym pick-me-up.
Not only are these protein bites incredibly simple to whip together, but they’re also chuck full of brain and skin boosting ingredients. I add Bulletproof Brain Octane Oil in my coffee every morning and constantly look for more opportunities to incorporate it into my diet.

For those unfamiliar with Brain Octane Oil, it is pure C8, or Caprylic Acid, that’s extracted from the most powerful part of the coconut. Its fat-burning, brain-fueling and belly-filling properties are more efficient than those found in regular coconut or MCT oils. Plus, it’s completely tasteless, so you can easily add it to just about anything for a great energy booster!
My other secret ingredient in these tropical bites is a scoop of Vital Proteins Collagen Peptides, popular for its variety of benefits when taken regularly. Form the dough into balls and roll in additional shredded coconut.
