
Growing up, I lived off of PB & Js or peanut butter and banana sandwiches. I mean who didn’t?! And a good cheese quesadilla likewise made an appearance in our house on busy days when we needed dinner or a snack in a pinch. So why not combine the love for all of these favorites into one, delicious treat? Don’t worry, I left out the cheese on this one 😉 .
For this recipe and any other time I find myself whipping up tacos, I always use my favorite Siete Foods Grain Free Tortillas. For this sweet-style quesadilla, simply smear both tortillas with peanut butter (can sub your favorite nut butter of choice) and jelly. I used my Super Simple Raspberry Chia Jam which is easy to make, tasty AND refined sugar free, but any jelly or jam you love and have on hand works perfectly!

Throw on some sliced bananas and cook your quesadilla on both sides for a few minutes until nice and golden brown. I recommend Chosen Foods Coconut Oil Spray for cooking up this sweeter version. When warmed through, slice up your quesadilla, drizzle with honey, sprinkle with cacao nibs, and you’re in business.

Place banana slices on one side. Stack tortillas together.
Spray a non-stick sauté pan with coconut oil spray. Cook on each side for 2-3 minutes until golden brown and warmed through.
Slice into 4 pieces, drizzle with honey and sprinkle with cacao nibs.
